4 large eggs
½ cup milk
½ cup heavy cream
1 cup crumbled feta cheese, divided
2 tablespoons chopped chives

Directions

  1. The oven should be preheated to 400 degrees Fahrenheit. In a bowl, combine the shallots, sweet potatoes, and approximately two teaspoons of coconut oil. Toss to combine. To prepare the kale, drizzle the remaining coconut oil over it, massage it thoroughly, and then set it aside.
