Everyone likes one-pot wonder dinners that get everything done in one pan. This maximizes flavor blending with minimal cleaning. This delicious, vegetarian one-pot spaghetti dish takes less than 30 minutes to prepare. This dinner is perfect for large groups or traveling families.

Other veggies can be used, but mushrooms, onion, tomatoes, and spinach provide taste and nutrition. This vegetarian recipe may be vegan with a few changes. This spaghetti side or main course goes well with any dinner.

ONE-POT VEGETARIAN SPAGHETTI

Ingredients

  1. Two teaspoons of olive oil that is extra virgin
  2. A quarter cup of chopped white onion
  3. Two cloves of garlic, minced, 2 cups of low-sodium vegetable broth, one package of white button mushrooms, sliced, and one box of white button mushrooms
  4. One can of fire-roasted tomatoes, 14.5 ounces in size
  5. One box of dried spaghetti weighing ten ounces
  6. 3 cups of baby spinach leaves that are fresh
  7. One-fourth of a cup of grated Parmesan cheese, in addition to more cheese for garnishing
  8. The garnish consists of ¼ cup of fresh chopped basil.
  9. Red pepper flakes that have been crushed (optional).
  10. Black pepper that has been freshly crushed and Kosher salt

Directions

  1. Within a big saucepan, bring the olive oil to a temperature of medium-high.
  2. The mushrooms and onions should be sautéed in the oil after they have been added to the pot. For around five to seven minutes, allow the veggies to cook until they begin to reduce in size and the mushrooms begin to lose their liquid.
  3. Garlic, salt, pepper, and finely chopped red pepper flakes should be added to taste. Sauté the vegetables in the oil until they are thoroughly combined, which should take approximately a minute.
  4. The tomatoes and vegetable broth should be added to the saucepan after the heat has been increased to a high setting. Brought to a boil in water.
  5. To the pot, add the spaghetti, and then cover it with the liquid by submerging it. While the pot is covered, the heat should be reduced to medium. The spaghetti should be allowed to simmer for five to seven minutes.
